Almond Joy Protein Balls are the perfect healthy snack that blends almond butter, coconut, and chocolate into a delicious, protein-packed bite. Great for energy, pre-workout fuel, or a sweet treat.
Ingredients

- 1 cup almond butter
- 1 cup rolled oats
- 1/2 cup shredded unsweetened coconut
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 1/4 cup chocolate chips (optional)
- 1/4 cup protein powder (vanilla or chocolate)
- 1 tbsp chia seeds or flaxseeds (optional)
- 1–2 tbsp almond milk (if mixture is too dry)
Instructions
- In a large bowl, combine oats, shredded coconut, protein powder, and chia seeds or flaxseeds.
- In a separate bowl, mix almond butter, honey or maple syrup, and vanilla extract. Microwave for 15–20 seconds to blend easier.
- Pour wet ingredients into dry ingredients and stir until well combined. Add almond milk if mixture is too dry.
- Fold in chocolate chips if using.
- Use your hands or a small scoop to form bite-sized balls.
- Place on a tray lined with parchment paper and refrigerate for at least 30 minutes.
- Store in an airtight container in the fridge for up to 1 week or freeze for longer storage.
Notes
Adjust sweetness and texture by using maple syrup or stevia-based options and adding almond milk as needed. For a vegan version, use plant-based protein and maple syrup instead of honey.
