Almond Joy Protein Balls are the perfect healthy snack that blends almond butter, coconut, and chocolate into a delicious, protein-packed bite. Great for energy, pre-workout fuel, or a sweet treat.


Ingredients

  • 1 cup almond butter
  • 1 cup rolled oats
  • 1/2 cup shredded unsweetened coconut
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/4 cup chocolate chips (optional)
  • 1/4 cup protein powder (vanilla or chocolate)
  • 1 tbsp chia seeds or flaxseeds (optional)
  • 12 tbsp almond milk (if mixture is too dry)

Instructions

  1. In a large bowl, combine oats, shredded coconut, protein powder, and chia seeds or flaxseeds.
  2. In a separate bowl, mix almond butter, honey or maple syrup, and vanilla extract. Microwave for 15–20 seconds to blend easier.
  3. Pour wet ingredients into dry ingredients and stir until well combined. Add almond milk if mixture is too dry.
  4. Fold in chocolate chips if using.
  5. Use your hands or a small scoop to form bite-sized balls.
  6. Place on a tray lined with parchment paper and refrigerate for at least 30 minutes.
  7. Store in an airtight container in the fridge for up to 1 week or freeze for longer storage.

Notes

Adjust sweetness and texture by using maple syrup or stevia-based options and adding almond milk as needed. For a vegan version, use plant-based protein and maple syrup instead of honey.
