Instructions
- In a bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Add ice water gradually and mix until dough forms. Shape into a disc, wrap in plastic, and refrigerate for at least 30 minutes.
- Peel, core, and dice apples. In a saucepan, combine apples, sugar, cinnamon, nutmeg, cornstarch, and lemon juice. Cook over medium heat for 8–10 minutes until softened and thickened. Cool completely.
- Preheat oven to 400°F (200°C). Roll out chilled dough to 1/8-inch thickness and cut into 6-inch squares.
- Spoon filling into the center of each square. Fold into triangles and seal edges with a fork. Cut small slits on top for ventilation.
- Brush turnovers with egg wash and sprinkle with sugar if desired. Bake for 20–25 minutes until golden brown. Cool slightly before serving.
