Ingredients

  • 2 lbs beef shank or chuck
  • 2 lbs beef bones (marrow, knuckle, or oxtail)
  • 12 cups water
  • 2-inch piece ginger, sliced
  • 4 cloves garlic
  • 4 green onions
  • 2 star anise
  • 1 cinnamon stick
  • 3 cloves
  • 1 tsp Sichuan peppercorns
  • 1/4 cup light soy sauce
  • 2 tbsp dark soy sauce
  • 1/4 cup Shaoxing wine
  • 1 tbsp rock sugar
  • Salt to taste
  • Hand-pulled or wheat noodles
  • Bok choy or spinach
  • Pickled mustard greens
  • Fresh cilantro
  • Chili oil (optional)

Instructions

  1. Blanch beef bones and beef cuts in boiling water for 5 minutes, then rinse.
  2. Optionally roast bones and beef at 400°F for 30 minutes for extra flavor.
  3. Place bones, beef, ginger, garlic, and green onions into a large pot with water. Bring to boil, then simmer.
  4. Add light soy sauce, dark soy sauce, Shaoxing wine, star anise, cinnamon, cloves, Sichuan peppercorns, and rock sugar.
  5. Simmer uncovered for 4-6 hours, skimming foam regularly.
  6. Strain broth, remove bones and aromatics, and slice cooked beef for serving.
  7. Boil noodles separately as per package instructions; rinse with cold water to maintain texture.
  8. Dip noodles briefly in hot water before assembling the bowl.
  9. Place noodles in serving bowls, top with sliced beef, and ladle hot broth over.
  10. Garnish with bok choy, pickled mustard greens, cilantro, green onions, and chili oil.
  11. Serve immediately and enjoy.

Notes
