- 2 boneless, skinless chicken breasts or thighs
- 4 cups chicken stock
- 1 cup heavy cream or coconut milk
- 1/2 cup grated Parmesan cheese
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp thyme
- 1 tbsp chopped fresh parsley
- 1/2 cup sun-dried tomatoes (optional)
- 1 cup spinach or kale (optional)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Season chicken with salt, pepper, and garlic powder. Sear in a large pot until golden, then set aside.
- Sauté onions and garlic in the same pot until translucent.
- Deglaze with a splash of wine or broth, scraping the bottom of the pot.
- Add chicken stock and bring to a simmer.
- Stir in cream, Parmesan, and herbs. Simmer to combine flavors.
- Return chicken to the pot and simmer until cooked through.
- Add sun-dried tomatoes and spinach if using. Cook until wilted.
- Ladle into bowls, garnish with parsley, and serve hot.
Notes
Use fresh herbs and high-quality stock for the best flavor. For a lighter version, substitute cream with unsweetened almond milk and omit the cheese.
