  • 1 can (or 1.5 cups fresh) sweetcorn
  • 4 cups low-sodium chicken broth

  • 2 tbsp cornstarch (mixed with 3 tbsp water to make a slurry)
  • 1 tbsp soy sauce
  • 1 tsp minced ginger
  • 2 tbsp chopped green onions (for garnish)
  • 1 tsp sesame oil (optional)

 

  • Salt & pepper to taste

Instructions

  • Prepare the Chicken:

    • If using fresh chicken, boil it for 10-15 minutes until fully cooked.
    • Let it cool slightly, then shred it into thin pieces using two forks.
    • If using rotisserie chicken, simply shred and set aside.
  • Heat the Broth:

    • In a medium saucepan, bring chicken broth, soy sauce, ginger, and sweetcorn to a gentle boil over medium heat.
    • Stir and let it simmer for 5 minutes to blend flavors.
  • Thicken the Soup:

    • In a small bowl, mix cornstarch with 3 tbsp water to make a slurry.
    • Slowly pour it into the soup while stirring continuously.
    • Simmer for 2 minutes until the soup slightly thickens.
  • Add the Shredded Chicken:

    • Stir in the shredded chicken and let it simmer for another 5 minutes to absorb the flavors.
  • Create Egg Ribbons:

    • Beat one egg in a small bowl.
    • Reduce heat to low. While stirring the soup in a circular motion, slowly drizzle in the beaten egg to form delicate ribbons.
    • Cook for 1 more minute, then remove from heat.

 

  • Garnish & Serve:

    • Stir in sesame oil (if using).
    • Adjust salt and pepper to taste.
    • Garnish with chopped green onions before serving.

  • For a richer broth: Use homemade chicken stock.
  • For extra creaminess: Blend half of the corn before adding it to the soup.
  • For a vegetarian version: Substitute chicken with tofu and use vegetable broth.
