  • 2 tbsp soy sauce

  • 1 tsp garlic powder (optional)

  • Zest of 1 lemon

  • 2 large eggs, beaten

  • 1 cup cornstarch

  • ½ cup all-purpose flour

  • Neutral oil for frying (canola or peanut oil recommended)

For the Lemon Sauce:

  • Juice and zest of 2–3 fresh lemons (about ⅓ cup juice)

  • ⅓ cup sugar

  • ½ cup water

  • 1 tbsp cornstarch

  • 2 tbsp cold water (for slurry)

  • Salt to taste

  • Optional: 1 tsp grated fresh ginger or 1 tbsp minced garlic for added depth


Instructions

  • Marinate the Chicken:
    In a bowl, combine sliced chicken with soy sauce, garlic powder, and lemon zest. Let sit for 15 minutes to infuse flavor.

  • Prepare Dredging Stations:
    Beat eggs in one bowl. In another, mix cornstarch and flour. Dip chicken pieces in egg, then coat thoroughly in the dry mix. Let rest on a wire rack for 5–10 minutes.

  • First Fry:
    Heat oil to 325°F. Fry chicken in batches for 3–4 minutes until lightly golden. Drain on a wire rack or paper towels.

  • Second Fry:
    Increase oil temperature to 375°F. Fry chicken again for 1–2 minutes until crispy and deep golden brown. Drain again.

  • Make the Lemon Glaze:
    In a saucepan, combine lemon juice, zest, sugar, and water. Bring to a simmer. Mix cornstarch with cold water to form a slurry, then stir into the sauce. Cook until thickened and glossy. Season with salt and adjust sweetness or tartness as needed.

 

  • Toss and Serve:
    While chicken is hot, place it in a large bowl and pour lemon glaze over. Toss quickly to coat evenly. Serve immediately with rice, noodles, or steamed greens.
