Fudgy Brownie Cookies

Description

If you’re a chocolate lover, you no longer have to choose between brownies and cookies—these fudgy brownie cookies give you the best of both worlds! With a soft, gooey center like a brownie and chewy edges like a cookie, every bite is deeply chocolatey and irresistibly decadent. This easy, fail-proof recipe ensures perfect results every time, whether you’re baking for a special occasion or just indulging your sweet tooth.

Ingredients

  • Unsalted Butter – ½ cup (1 stick) (adds richness and moisture)
  • Dark Chocolate – 8 oz (provides deep chocolate flavor)
  • Cocoa Powder – ¼ cup (intensifies the chocolate taste)
  • Granulated Sugar – ¾ cup (helps create a slight crisp on the edges)
  • Brown Sugar – ½ cup (adds chewiness and depth)
  • Eggs – 2 large (provides structure and moisture)
  • Vanilla Extract – 1 tsp (enhances the chocolate flavor)
  • All-Purpose Flour – ¾ cup (just enough to hold the cookies together)
  • Salt – ½ tsp (balances and enhances flavor)

  • Chocolate Chips – ½ cup (adds extra bursts of chocolate)

Instructions

1️⃣ Melt the Chocolate & Butter

  • In a heatproof bowl, melt the butter and dark chocolate together.
  • Stir until smooth and glossy, then let it cool slightly.

2️⃣ Mix the Dry Ingredients

  • In a separate bowl, whisk together the flour, cocoa powder, and salt.

3️⃣ Whip the Eggs & Sugar

  • Using a hand mixer, beat the eggs, granulated sugar, and brown sugar on high speed for 2-3 minutes until pale and fluffy.
  • This step helps create a shiny, crackly top like classic brownies!

4️⃣ Combine Wet & Dry Ingredients

  • Slowly mix the melted chocolate mixture into the eggs and sugar.
  • Gently fold in the dry ingredients until just combined.

5️⃣ Chill the Dough

  • Refrigerate for 20-30 minutes. This prevents excessive spreading.

6️⃣ Scoop & Bake

  • Preheat oven to 350°F (175°C).
  • Scoop 1 tablespoon-sized dough balls onto a lined baking sheet.
  • Bake for 10-12 minutes until the edges are set, but the centers remain soft.

7️⃣ Cool & Enjoy

  • Let the cookies rest on the tray for 5 minutes before transferring to a cooling rack.

Notes

💡 Baking Tips for Extra Fudginess

✔️ Do not overbake! The cookies will continue to set as they cool.
✔️ Whip the eggs and sugar well to create a crackly top.
