- ½ cup white sugar
- 2 large eggs
- 1 tsp vanilla extract
- ¾ cup well-drained crushed pineapple
- 2 ½ cups all-purpose flour
- ½ tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- Optional: ½ cup shredded coconut
- Optional: ½ tsp lime zest
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream butter and sugars together until light and fluffy.
- Beat in the eggs one at a time, followed by vanilla extract.
- Mix in the crushed pineapple until just combined.
- In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
- Gradually mix dry ingredients into the wet mixture.
- Fold in optional coconut or lime zest if using.
- Drop spoonfuls of dough onto baking sheets, spacing 2 inches apart.
- Bake for 10–12 minutes, or until edges are lightly golden.
- Cool on tray for 5 minutes before transferring to a wire rack.
Notes
Drain pineapple thoroughly to avoid soggy cookies. For crispier edges, flatten slightly before baking. Add coconut or white chocolate for fun tropical twists.
