  • 1 cup chives, finely chopped
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1 tbsp cornstarch
  • Salt and pepper to taste
  • 2 cups all-purpose flour (for wrappers)
  • 3/4 cup warm water (for wrappers)
  • Pinch of salt (for wrappers)

Instructions

  1. In a large bowl, combine ground pork, chives, soy sauce, sesame oil, garlic, and ginger.
  2. Sprinkle cornstarch over the mixture and season with salt and pepper.
  3. Mix thoroughly until the filling is well blended. Refrigerate for 30 minutes.
  4. For the wrappers, mix flour and salt in a bowl, gradually adding warm water while stirring.
  5. Knead the dough on a floured surface for 8–10 minutes until smooth. Cover with a damp cloth and let rest for 30 minutes.
  6. Divide dough into small balls and roll each into thin circles (about 3 inches in diameter). Lightly flour to prevent sticking.
  7. Place a wrapper on your palm and add 1 teaspoon of filling to the center. Moisten edges with water, fold, and seal with pleats or a mold.
  8. For steaming: Place dumplings in a parchment-lined steamer and steam for 10–12 minutes.
  9. For pan-frying: Heat oil, arrange dumplings, fry until golden, add water, cover, and steam until cooked.
  10. For boiling: Add dumplings to boiling water, cook until they float, then 2–3 more minutes.
  11. Serve hot with your choice of dipping sauces such as soy sauce & vinegar, chili oil sauce, peanut butter sauce, or sweet and sour sauce.

Notes

Avoid overfilling dumplings to prevent breakage. Always cook a test dumpling first to check seasoning and doneness.
