Ingredients
Scale
For the Batter:
- 1 cup all-purpose flour
- ¾ cup granulated sugar
- 2 tbsp unsweetened cocoa powder
- 2 tsp baking powder
- ¼ tsp salt
- ½ cup whole milk
- 4 tbsp unsalted butter, melted
- 1 tsp vanilla extract
For the Topping:
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- ¼ cup unsweetened cocoa powder
- 1 ½ cups boiling water
🔹 Pro Tip: Use Dutch-processed cocoa for a deeper chocolate flavor.
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish with butter or nonstick spray.
- Prepare the batter: In a medium bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt.
- Add wet ingredients: Stir in milk, melted butter, and vanilla extract until a smooth batter forms.
- Spread batter evenly into the greased baking dish.
- Make the topping: In a small bowl, mix granulated sugar, brown sugar, and cocoa powder. Sprinkle evenly over the batter.
- Pour boiling water evenly over the top—do NOT stir. This creates the self-saucing effect as it bakes.
- Bake for 35-40 minutes, until the top is set and slightly crispy, but the center remains gooey.
- Let cool for 5 minutes before serving. The bottom will be pudding-like and fudgy.
- Serve warm with vanilla ice cream or whipped cream.
🔹 Baking Tip: If you want an extra gooey center, slightly underbake your cobbler by removing it at 35 minutes.
