For the Topping:

  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • ¼ cup unsweetened cocoa powder
  • 1 ½ cups boiling water

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish with butter or nonstick spray.
  2. Prepare the batter: In a medium bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt.
  3. Add wet ingredients: Stir in milk, melted butter, and vanilla extract until a smooth batter forms.
  4. Spread batter evenly into the greased baking dish.
  5. Make the topping: In a small bowl, mix granulated sugar, brown sugar, and cocoa powder. Sprinkle evenly over the batter.
  6. Pour boiling water evenly over the top—do NOT stir. This creates the self-saucing effect as it bakes.
  7. Bake for 35-40 minutes, until the top is set and slightly crispy, but the center remains gooey.
  8. Let cool for 5 minutes before serving. The bottom will be pudding-like and fudgy.
  9. Serve warm with vanilla ice cream or whipped cream.

 

🔹 Baking Tip: If you want an extra gooey center, slightly underbake your cobbler by removing it at 35 minutes.
