Fresh summer salad with watermelon, feta, cucumber, tomatoes, and mint for a refreshing Watermelon Feta Salad.

Watermelon Feta Salad

Description

When the summer heat is at its peak, nothing refreshes like a vibrant Watermelon Feta Salad. Juicy, sweet watermelon paired with creamy, salty feta cheese creates a light, irresistible dish perfect for backyard barbecues, picnics, or casual lunches. With fresh mint, crisp cucumber, and a zesty lime dressing, this easy salad is your ticket to effortless summer dining.

Ingredients

Scale
  • 4 cups fresh watermelon, cubed (seedless preferred)

  • 1 cup feta cheese, crumbled (use a fresh block, not pre-crumbled)

  • 1/4 cup fresh mint, chopped (or substitute with basil)

  • 1 cucumber, diced (peeling optional)

  • 2 tablespoons olive oil (high-quality extra virgin)

  • 2 tablespoons lime juice (freshly squeezed)

  • Salt, to taste (adjust based on feta’s saltiness)

  • Black pepper, to taste (preferably freshly cracked)

Instructions

  • Cube the Watermelon: Cut the watermelon into bite-sized cubes and drain excess juice using a colander.

  • Prepare the Cucumber: Dice the cucumber into small pieces. Peeling is optional but adds extra color and fiber if left on.

  • Combine the Base: Gently toss the watermelon and cucumber together in a large serving bowl.

  • Add Feta and Mint: Crumble fresh feta over the top and sprinkle with chopped mint.

  • Drizzle and Season: Drizzle olive oil and lime juice over the mixture, then season lightly with salt and black pepper.

  • Toss and Serve Immediately: Lightly toss everything together right before serving to preserve texture and flavor.

Notes

  • Variations: Add avocado slices, toss in blueberries or strawberries, swap mint for basil or cilantro, or mix in cooked quinoa for a heartier salad.

  • Pro Tips: Always use fresh block feta and freshly squeezed lime juice for the best flavor. Drain watermelon well to prevent sogginess.

  • Storage: Best enjoyed fresh but can be refrigerated up to 2-3 days. Store dressing separately if prepping ahead.
